Go-To Breakfast Made Fast

I am most definitely a “must eat breakfast” person! I really don’t know how people can go without something in the morning — I wake up already hungry. So I have a couple go-to’s in the morning I can rely on but this is probably my most used (sometimes for dinner too.).

Avocado Toast with Egg White Scramble:

  • Toast your bread of choice — I get an Ezekiel bread because it has more protein, fiber and nutrients/minerals then your standard bread; if I want to “treat myself” more I get a nice sourdough

  • Pick some ‘toppings’ for your egg scramble and prepare; I often will do mushrooms, peppers, onions and perhaps spinach

  • Scramble up 2-3 egg whites — I usually stick to either an organic egg or at least cage free; watch the “liquid egg whites” because is that what you’re really getting?

  • Mash up your avocado - a good hearty half will go along way - and spread over your toast. I will also sprinkle some goodness on the toast: maybe a little turmeric, a pinch of sea salt or ground pepper, sometimes a little honey if I am leaving my eggs bland

  • Sometimes I turn this into more of a sandwich, placing my scramble in the toast

  • And enjoy :)

And there you go! A quick and easy breakfast that will fuel you up and get your day started off good — hope you enjoy!

I have never been one to make any formal resolutions, but I felt it was necessary this year since there is sooo much huge stuff going on over the next 12-24 months.  Getting these down
