October Recipe of the Month

This pancake recipe is one of my favorites and also great for fall! I pretty much can do pancakes for any meal of the day, so these are great to make a whole bunch of and freeze for later. Enjoy!

Ingredients:

  • 1/2 cup pumpkin puree — packs a ton of vitamins for immunity boosting like Vitamin A

  • 1/3 cup coconut flour (or almond flour)

  • 2 eggs

  • 1 t cinnamon

  • 1/2 t nutmeg

  • 1 t honey (raw organic is what I use)

  • touch of salt

  • 1 t flaxseed - often I will add some chia seed too

  • 1 t vanilla extract

  • 2 T protein powder - I used either Rootz Nutrition or even a collagen peptide from Vital Proteins

  • coconut oil/spray for cooking

What to do:

Combine dry ingredients in one bowl and wet ingredients in another — then mix them together. On your hot pan or skillet, add your coconut oil/spray, Spoon the batter into the pan. Cook on high for about 3-4 minutes, flip and cook on the other side for 2-3 more minutes (or until your desired texture). I serve with an organic maple syrup — sprinkle some more cinnamon or even a la mode for a nice dessert!
