Since I’m spending the week in Mexico I’m diving in deep to the amazing cuisine they have here! Here’s the must haves I plan on indulging in:
Chips and salsa — seems basic yes, but have you ever had the straight from Mexico salsa and not the stuff in the jar? To say you can taste the difference is an understatement; it’s fresh, full of flavor, and you really can’t have enough
Chilaquiles — a popular traditional breakfast dish featuring lightly fried corn tortillas cut into quarters and topped with green or red salsa, typically with some type of egg or chicken on top, with cheese of course
Tacos al pastor — I can live off any tacos so being in taco country is amazing. This popular item is tacos with thin strips of pork that are sliced off a spit and served with onions, coriander leaves and pineapple
Elote — you can get these basically on every street here. Elote is the Mexican name for corn on the cob, where it is traditionally boiled and served either on a stick (to be eaten like an ice cream) or in cups, the kernels having been cut off the cob. Salt, chilli powder, lime, butter, cheese, mayonnaise and sour cream are then added in abundance. Not an item to have every day if you want to stay somewhat healthy, but sister you must try once
Enchilades — simple again yet authentic, fresh, and amazing here. Corn or flour tortillas filled with meat, cheese, seafood, beans, vegetables - separate or all together! Then covered in a chili sauce
GUACAMOLE — you cannot find anything better here and nothing like this in the States. It speaks for itself
