In the spirit of Thanksgiving coming up, or really just in the spirit of liking yummy east to make food, I bring to you my go-to side dish: roasted sweet potatoes!
I love a good sweet potato because:
Super nutritious — fiber, vitamins, minerals, you name it
Great for gut health
Supports immune system
Fills me up
Really tasty!
I know everyone loves a mashed potato on Thanksgiving, and so do I, but when it comes to the sweet ones I like them diced up and roasted. Here’s a super basic recipe I use for these — note I am not a “lets be in the kitchen for several hours cooking” type of lady. This side dish is PERFECT for me to make:
Keep your potatoes peeled or peel them — really doesn’t matter, I keep mine peeled (they say it has more nutrients too)
Chop up your potatoes; I keep mine around 1/2 - 1 inch cubed
Toss up the chopped potatoes into a mixing boil of oil & seasonings: avocado or coconut oil work great, definitely like garlic powder, some paprika maybe, pepper, turmeric sometimes, or I’ll sprinkle with parsley too. Just don’t go overboard, keep a couple main ones and then next time try another set of 3 or 4 seasonings
Roast at 425 degrees F for roughly 15 minutes to start (keeping them spread enough apart) — take your potatoes out and toss them up some so all sides get some love — roast another 15 minutes or so
In the picture, I just sliced up some avocado and threw it in there too because for me I’ll put avocado in anything!
