Feb Recipe of the Month - Pack and Go Salad!

The February recipe of the month is more of a ‘meal’ mixed with a food prep idea -- it’s a jam packed salad that is great for those office lunches! I love food prepping this because it’s super easy to get together, it is loaded with so much nutrients and goodness for you, and it’s a tasty way to fill you up without feeling guilty. Super good for lunch in the office, but definitely a great dinner option as well.

What I use:

  • Grilled chicken — I usually will cook some chicken in my Instant Pot, but if I’m having an extremely busy week I will buy pre-cooked chicken (yes I know this isn't always the best, but sometimes life happens and the cooking gets delayed)

  • Lettuce — I will try to spruce up my lettuce choices and combine some: typically there is always an iceberg in there, but I love adding spinach and kale as well

  • Sliced hard boil eggs — huge fan of eggs! Easy to hard-boil and cut up

  • Sliced up tomatoes

  • Sliced up avocado

  • Cheese — sometimes cubed, sometimes shredded. Typically I will go for a feta or a goat cheese, but sometimes I like to sprinkle parmesan

  • Chopped up bacon — depending on how I’m feeling. I will always cook up my own bacon, often times turkey bacon, and crumble up for some extra flavor

  • Dressing — typically an oil and vinegar to keep it on the easy side and let the flavors of the salad come thru

  • Pack in the container of your choice!

It’s simple, yet satisfying — tasty, yes good for you — and overall a solid choice to look into for your future meal prepping! Hope you enjoy :)
